There is nothing in the world better than a cold beer and a bowl of warm chili con queso. This isn't plain old nachos. It's the ultimate comfort food. Thick, rich, and spicy. Tippy's Taco on Gorman Ave. has the best Chili con queso on earth.
I have obtained their secret recipe for you. I can't say how I got it ... but I will testify that it was without the use of any enhanced interrogation techniques.
Make a double batch, buy plenty of Rolling Rock 7 ounce beers. Invite some friends over and enjoy.
Tippy's Chili con Comfort
1 t salt
1 t ground cumin
1/2 t garlic powder
1 t red cayenne pepper
1/2 t black pepper
1 lb American cheese
2 T finely chopped onion
2-3 T strained canned tomatoes
3/4 C water1 can chopped green chiles
In a double boiler combine cheese, water, onion, chiles and tomatoes. Cook until cheese melts. Add 2 t of spice mixture at a time until you reach desired level. Cook until it gets to the correct dipping consistency.

For those who don't know, Tippy's is now called "Toucan Taco" - an interesting place to visit! Occasionally (only occasionally), I wish they used cilantro once in a while. But I guess that would spoil the ambience!

Mt recollection is that it also contained whole cumin seeds.

I remember a few years or so back one of the workers put up the recipe from tip and it was an american cheese I remember they used several Mexican cheeses to make it that's why it costs so much using American cheese and they want to charge what they do that no no this is not the original recipe there was no American cheese in it it was Mexican cheeses and it was like five of them would I remember I too have lost mine cuz I made a copy of it and I remember specifically that it was five different Mexican cheeses would I use now is from Sam's Club and it's called Mexican cheese mix and it's already shredded but I still go over and get a couple of the other Mexican cheeses and it had jalapeno peppers in it green chili peppers and it had red chili peppers and cilentis chopped real finely as a garnish cumin grounded sprinkled on top cumin grounded not seeds there was no tomatoes in it whatsoever and whoever put that up that this recipe that is not tippies at all if they think that's good with the American I hate to see what they would do if they had the real tippies recipe anyway try that I do everything to taste so depends on how hot you want to make it jalapeno peppers it's a must in it with a little bit of the juice I use whole milk to diluted after I get the cheese melting just enough to make it to where it's a little bit runny not supposed to be extra thick so it's be runny like a gravy not thin gravy pins on your taste to how thick you want to get but you use cornstarch not flour to thicken good luck
